- 1/2 cup grated carrot(about 1 medium)
- 1/2 cup shredded zucchini
- 1/4 cup chopped walnuts, toasted
- 1/4 cup canola oil
- 1/4 cup nonfat buttermilk
- 2 large eggs cooking
Sriracha-Glazed Chicken and Onions

Just discovered Sriracha sauce recently (hot chile sauce - find in the Chinese section at grocery store)
- 3 T. hoisin sauce
- 1 T. ketchup
- 1-1/4 t. Sriracha (kick it up if you like hot!!)
- 1-1/2 T. canola oil
- 1-1/2 c. sliced onion
- 1 T. fresh ginger, minced
- 1 T. garlic, minced
- 3/4 t. curry powder
- 1 pound boneless chicken breast, cut into 1" thick slices

Coconut Snowball Crisps

- 3 large egg whites
- 1 pinch salt
- 1 cup confectioners' sugar
- 2 cups sweetened shredded coconut
- 2 cups crispy rice cereal
- 1/4 cup cornstarch
- TIP: Separate eggs when they're cold, but wait until they're at room temperature for most volume when whipping.
