Claire's Spinach Salad

This salad is as pretty as it is delicious. Prepare the dressing and the ingredients in advance, then toss with spinach right before serving.

Ingredients

  • 2

    cans mandarin oranges, drained

  • 1/2

    pound bacon, cooked and crumbled

  • 1/2

    c. toasted slivered almonds

  • 1

    red onion, cut in thin rings

  • 2

    heads greens (spinach, red leaf lettuce –or can do all spinach)

  • 8

    oz. sliced mushrooms

  • 2

    hard boiled eggs, grated

  • DRESSING:

  • 1

    t. dry mustard

  • 1

    t. fresh pepper

  • 2/3

    c. sugar (I use a little less)

  • 5

    T. vinegar

  • 1

    t. lemon juice

  • 5

    T. honey

  • 1

    t. grated onion

  • 1/4

    t. salt

  • 1

    t. celery seed

  • 1

    c. canola oil

Directions

SALAD: Place spinach/greens in large salad bowl. Top with onion rings, mushrooms, mandarin oranges, bacon, grated egg and almonds. Pour in enough dressing to lightly coat. DRESSING: Put all ingredients except oil in small saucepan; stir over low heat until sugar dissolves. Cool. Whisk in canola oil until dressing is blended and thick. (can half the dressing recipe) ENJOY!!
