Honey-Rum Marinated Oranges (Weight Watchers)

This light, refreshing dessert is perfect after a heavy winter meal
- 1/3 cup(s) honey
- 1/3 cup(s) water
- 2 fl oz rum, dark-variety (about 4 Tbsp)
- 1 average cinnamon stick(s)
- 5 large orange(s), navel-variety
- 2 Tbsp fresh lemon juice
- 2 Tbsp mint leaves, fresh (for garnish)
Mexican Stuffed Pepper Biscuit Tostadas

Do stuffed peppers one better, when filled pepper wedges are nestled in flaky biscuits
- 2 large bell peppers (any color)
- 4 cups water
- 1 lb lean (at least 80%) ground beef
- 1 package (1 oz) Old El Paso® taco seasoning mix
- 1 cup Old El Paso® Thick 'n Chunky salsa
- 1 can (16.3 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits (8 biscuits)
- 1 egg, slightly beaten
- 1 cup shredded Mexican cheese blend or Monterey Jack cheese (4 oz)
- 1/2 cup sour cream, if desired

Fillet a la Veracruzana

Rachael Ray recipe. Can be made with chicken or fish - your choice
- Flour to dredge
- 4 fillets (either chicken or snapper; tilapia works too)
- 2 tablespoons extra-virgin olive oil (EVOO)
- 1 tablespoon vegetable or canola oil
- 1/2 large Spanish onion, sliced
- 1/2 large red bell pepper, cut into half-inch slices, lengthwise
- 2 cloves garlic minced
- 2 large plum tomatoes, cut lengthwise into 8 wedges
- 1 tablespoon capers
- 1 lime, juiced
- 1/2 cup cilantro, chopped
- Salt and pepper
- 1 avocado, pit removed and sliced
Pineapple Upside-Down Carrot Cake

- 1/4 cup butter
- 2/3 cup firmly packed brown sugar
- 1 (20-oz.) can pineapple slices in juice, drained
- 7 maraschino cherries (without stems)
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups grated carrots
- 1/2 cup finely chopped pecans
Double-Gingered Orange Carrots

Use a sharp vegetable peeler to slice ginger into long, thin shavings
- 1-1/2 pounds baby carrots with tops (trimmed), or 1 pound small to medium carrots
- 2 t. olive oil
- 1/4 c. orange juice
- 1 (one-inch) piece fresh ginger, peeled and shaved or cut in very thin slices
- 2 T. toasted hazelnuts, chopped
- 1 T. chopped crystallized ginger

- 4 ounces goat cheese
- 4 ounces cream cheese (not whipped)
- 2 tablespoons chopped thyme or basil, divided

Easy Enchilada Casserole

You can make this layered casserole with ground beef or chicken
- Toppings:
- 1 pound lean ground beef (can substitute cooked chicken, even store-bought rotissiere works well)
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 cans (10-oz) Enchilada Sauce
- 1 package (6-inch) flour tortillas (about 8-10)
- butter
- 2 c. (8-oz) shredded cheddar cheese, divided
- 1/4 c. water
- Sliced green onions
- Shredded lettuce
- Chopped tomatoes
- Chopped onions
- Sour cream
- Salsa
Toni's Amazing Brownies

My friend first introduced me to these in 2002
- Add:
- Brownie mix (2) - Double Chocolate
- Kahlua
- Walnuts
- Coffee grounds
- Peanut butter
- (see below)
- These start with a brownie mix -- you're going to have to follow box instructions for the specifics. Just add the following ingredients (note the substituion for the water), and cook as directed on package.
- Two double chocolate brownie mixes (Ghiardelli is great) - SUBSTITUTE Kahlua for the water
- 1 c. chopped walnuts
- 1 T. coffee grounds (I use the ones from my morning pot of coffee!)
- 3 T. peanut butter
