My mom use to make this cake all the time. I think it became popular in the late 60's.

Ingredients

  • 3/4 C Mayo
  • 1 C Sugar
  • 2 TBS Cocoa
  • 1 Tsp Cinnamon
  • 1 Tsp Vanilla
  • 2 C Flour
  • 1/2 Tsp Salt
  • 1 C Dates (optional)
  • 1 C Nuts (optional)
  • 1 Tsp Soda
  • 1 C Boiling Water

Preparation

Step 1

Disolve solda in the boiling water and pour over the dates and nuts. Let stand and cool.

In the meantime, mix the suga, cocoa, connamon and mayo.

Add the cooled dates/nuts/water mixture.

Sift the flour and salt together and add to the mayo mixture.

Add vanilla.

Bake at 350 Deg. F until cake is done (springs back when touched) approx 20 min.

Ice with your favorite icing.
