An unwavering appreciation for sunshine, white sand beaches, chicken roti and pelau are all thanks to my Caribbean heritage. In fact, it is my fond familiarity with the flavor-infused Caribbean cuisine, that has forever corrupted my ability to enjoy anything that is remotely bland or poorly seasoned.  My Grandad’s homemade pepper sauce remains the most prized possession in any care package.  And it is the only condiment that has ever been allowed to grace the dining room table.  (As according to my Mother adding salt, pepper or ( God forbid) ketchup is a Caribbean sacrilege, a  disrespect worthy to only an amateur cook or a fast food establishment.)
