Ingredients

  • 3 cups mashed sweet potatoes (2 40 oz cans)
  • 1/2 cup sugar
  • 1 1/2 sticks plus 1 tbsp butter melted and cooled
  • 2 large eggs
  • 1 tsp vanilla
  • 1/3 cup evaporated milk (small can)
  • Pinch nutmeg
  • 1 cup firmly packed light brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans

Preparation

Step 1

1. Preheat oven to 325 degrees
2. In large bowl, whisk together sweet potatoes, sugar, 1/2 cup of the butter, eggs, vanilla, milk and the nutmeg until mixture is smooth
3. Transfer mixture to an 8 inch square (2 qt) baking dish
4. In a bowl, stir together with a fork, the brown sugar, flour, remaining butter and the pecans. Sprinkle this mixture over the sweet potato mixture
5. Bake the casserole in the oven for 30 mins
