  • 1 medium size eggplant, peeled and cut up
  • 2 eggs
  • 1 minced onion
  • dash tobasco
  • pepper
  • cracker crumbs
  • 1/2 cup milk

Step 1

Cook eggplant until done in salted water, drain and cool. Beat all, add eggs, onion, tobasco, pepper, cracker crumbs, and milk.

Place in butter casserole, dot with butter and add grated cheese. Cook 30 minutes or until done.
