Ingredients
- 1 T. butter
- 1 large onion, chopped
- 1 1/2 tsp curry powder
- 1/8 tsp red pepper flakes
- 2 granny smith apples peeled, cored, and diced
- 1/1 /2 cups canned solid pack pumkin
- 2 cans chicken broth
- 1/2 cup water
- 2/3 cup heavy cream or half and half

Step 1
1. Heat butter in large saucepan over medium heat. Add onion and saute 5 minutes until soft but not brown.
2. Stir in curry powder and red pepper flakes. Add apples and continue cooking 10 minutes longer.
3. Add pumpkin, broth, water; stir to combine. Cook 5 minutes and remove from heat.
4. Puree pumpkin mixture in food processor until smooth.
5. Return pumpkin to saucepan, bring to boiling and immediately lower heat. Simmer 2-3 minutes to blend flavor. Just before serving, stir in half and half
