Ingredients
- 1 (9 inch) pie shell, unbaked
- 1 c. (heaping) mashed sweet potatoes
- 1/2 c. sugar
- 1/3 c. melted BUTTER
- 1/2 tsp. cinnamon (ground)
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 1/4 tsp. salt
- 2 eggs
- 3/4 c. milk (evaporated)

Preparation
Step 1
Preheat oven to 350 degrees.
Blend all filling ingredients in blender or food processor. Pour into pie shell. Bake 45 minutes. Allow to cool to room temperature. Serve with whipped cream.
Mash sweet potatoes: Cool and peel two medium size sweet potatoes. Slice 1/4 inch thick slices and boil until soft. Drain and mash.
