Onion and Swiss Fondue

Ingredients
- 1 1/2 c. finely chopped onion
- 2 tbsp. butter
- 1 clove garlic, minced
- 4 tsp. cornstarch
- 1 c. reduced-sodium chicken broth
- 1 tbsp. dijon mustard
- 2 tsp. lemon juice
- 3 c. shredded swiss (12 oz)
- french bread, cut into 1" pcs. or broccoli florets

Preparation
Step 1
In lg. saucepan, cook onion in hot butter over med-low heat about 15 min. or till onion starts to brown, stirring occassionally. Stir in garlic. Cook 1 min. more. Stir in cornstarch. Add chicken broth, mustard, and lemon juice. Cook and stir till boiling. Reduce heat.
Gradually add cheese, a little at a time, stirring till melted. Do not boil.
Transfer to fondue pot; keep warm. Serve immediately w/ bread cubes or broccoli florets.
