Pork/Maple Roasted Pork Tenderloin

Ingredients
- 1/2 cup maple syrup
- 1/4 cup tomato sauce
- 1/4 cup red wine vinegar
- 1/4 cup fresh lemon juice
- 2 tbsp brown sugar
- 1 tbsp minced garlic
- 1/2 tsp ground ginger
- salt and freshly ground pepper to taste
- 2-1 # pork tenderloin

Step 1
Preheat oven to 350 degrees. In a suacepan, combine maple syrup, tomato sauce, vinegar, lemon juice,brown sugar, garlic, ginger and 1 tsp of salt and pepper; bring to a boil. Simmer over low heat for 15 minutes.
Meanwhile brush the meat with some of the sauce and roast for 10 minutes brushing with sauce twice. Remove from oven and baste meat with pan drippings.
Preheat broiler and positon rack 8" from the heat source. Brush with the sauce. broil meat 2-3 minutes until glazed and lightly crusty. Turn over. Brush the meat with sauce. broil another 2 minutes until glazed and crusty. Transfer to a work surface and slice.
