Spinach and Feta Cheese Stuffed Chicken
- Boneless Skinless Chicken Breasts (Thin Sliced)
- 1 cup Fresh Spinach
- 1/4 cup Crumbled Feta Cheese
- 2 tablespoon Garlic
- 2 tablespoon Extra Virgin Olive Oil
- 1 tablespoon salt and Pepper
Preheat oven to 400 degrees.
Warm skillet and pour oil and garlic, cook for 30 seconds.
Drop spinach into a pot and cook for a couple minutes or until the spinach is wilted, OR chop up dry. Remove from heat.
Take the chicken and put the feta on top and then put the spinach over feta. Roll chicken and put the toothpicks in. (rub garlic over chicken if desired).
Flavor with salt and pepper.
Cook for 20 minutes, uncovered.
