Ingredients
- 1 medium garlic clove
- 1 tbsp fresh lemon juice
- 1/8 tsp salt
- 1/8 tsp pepper
- 2 tbsp olive oil
- 1/2 med red pepper, finely chopped
- 1/4 cup red onion
- 1 16 oz cannellini beans, drained and rinsed
- 1 5 oz can chunk white tuna, packed in water; drain
- fresh basil, chopped to taste
- 1/2 tbsp lemon zest

Preparation
Step 1
Mince garlic and mash to paste. Mix garlic paste w/lemon juice, salt and pepper; slowlly whisk in olilve oil. Toss red pepper, onion and beans together in med bowl. Break apart tuna and mix into bean mixture. Add dressing and toss well. Add basil and lemon zest.
serving: 1 cup
