Ingredients

  • 2 1/4 c. flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 3/4 cup (1 1/2 sticks) butter
  • 1 1/2 c. sugar
  • 3 eggs
  • 3/4 c. buttermilk
  • Grated rind of 1 lemon
  • 3/4 c. chopped pecans
  • Glaze: 1/4 c. lemon juice
  • 3/4 c. powdered sugar

Step 1



Preheat oven to 325. Grease and flour loaf pan.

Sift together flour, salt and baking soda.

Beat together butter and sugar in large bowl until well blended. Beat in eggs, one at a time, beating well after each addition. Add flour mixture alternately with buttermilk, beating well after each addition. Stir in lemon rind and nuts. Turn batter into pan.

Bake for 1 hr. and 20 mins. or until wooden pick inserted in center comes out clean. Cool loaf in pan on wire rack for 15 mins.

While loaf is baking, prepare Glaze by combining ingredients in bowl. Let stand to allow sugar to dissolve. Turn loaf out on rack over wax paper. Pierce top of loaf all over with wooden pick. Spoon or brush Glaze over loaf. Allow to cool completely.
