Tomato Sauce with Shrimp and Feta

Ingredients

  • 4 Tbls Olive Oil
  • 1 Tbls Minced Garlic
  • 2 Cups Peeled, seeded and chopped ripe tomatoes
  • 1/3 C. Dry White Wine
  • 1/4 C. Chopped Fresh Basil
  • 1 Tsp Dried Oregano
  • Salt and freshly ground pepper to taste
  • 30 Medium Shrimp
  • 1/8 tsp Crushed Dried red pepper
  • 1/2 Pouned Feta Cheese, Crumbled

Step 1

Heat 2 Tbls of the oil in a saucepan over medium heat, add garlic and saute about 1 minute. Add Tomatoes and cook, stirring constantly for 2 to 3 minutes. Add the wine, basil, oregano, and salt and pepper. Simmer, stirring occasionally, for about 10 minutes

In a medium-size saute pan, heat the remaining 2 Tbls of olive oil over high heat. Add the shrimp and saute for 1 to 2 minutes, or until shrimp are pink and firm. Sprinkle with the red pepper flakes. Add to the tomatoe sauce and keep warm.

Sereve immediately over hot pasta (Rigatoni or a tubular-shaped pasta is recommended.) Sprinkle each serving with the feta cheese.
