Canola oil 15ml
Thinly sliced onion 250ml
Chicken broth 125ml
Curry powder 7ml
Medium zucchini quartered lengthwise and cut 2
Sprinkle of salt and pepper
Light spreadable cream cheese 30ml
Heat canola oil in large frying pan on medium-high ntil very hot. Add onion. Stir-fry for 2 minute until starting to golden. Add curry powder. Stir-fry for about 1 minute. Add chicken broth, zucchini, salt and pepper and stir-fry for about 5 minutes until zucchini is tender but crisp. Remove from heat. Add cream cheese.
