Cucumber, Olive And String Bean Salad

Ingredients
- Pinch Salt -- Coarse Salt, Ground
- 8 Oz Beans -- String, Ends Snapped
- 2 Ea Cucumbers -- 1 1/4 Pound
- 4 Oz Olives -- Black Or Green, Pit
- 1/4 Cup Parsley -- Flat Leaf, Torn
- 1 Tsp Mustard -- Dijon
- 1 Tab Vinegar -- Red Wine
- 2 Tbsp Oil -- Olive, Extra Virgin
- Pinch Pepper -- Coarse, Ground

Preparation
Step 1
Cook green beans until bright green and tender - put in ice water until cool. Drain and cut in half lenghwise; set aside!
Peel cucumber, split lengthwise and take out seeds with melon baller or spoon. Cut into 1/2 inch thick slices on diagonal.
Combine olives, cucumber, beans and parsely.
Whisk together mustard, vinegar to combine. Add oil, whisk to combine and season with salt and pepper. Toss with salad just before serving!
