Ingredients
- 8 slices of turkey bacon
- 1/2 Cup Onion - diced
- 1/2 Cup Celery - chopped
- 2 Garlic cloves - minced
- Salt and Pepper to taste
- 4 Cups Cauliflower - grated or riced ( approx 1 medium head )
- 2 TBSP Water
- 2 oz. Reduced-Fat Cream Cheese
- 1/4 Cup Regular Half and Half
- 3 Cups Chicken Broth
- 3-4 dashes Hot Sauce (to taste)
- 2 Cups Reduced Fat Shredded Sharp Cheddar Cheese
- 2 Green Onions - chopped (optional)
- 1 TBSP Olive Oil

Preparation
Step 1
Prepare and cut bacon into small pieces and set aside.
Saute celery, onion & garlic cloves in Olive Oil until tender.
Add cauliflower and 2 TBSP water to pot. Cover and simmer 5 minutes.
Add chicken broth, hot sauce, bacon, 2 cups of shredded cheese, cream cheese and half n half.
Stir and simmer 20-25 minutes. Remove from heat.
Allow to cool and sprinkle cheddar cheese and green onions upon the top if desired.
