Warm Spinach Salad

Ingredients
- 3/4 cup olive oil
- 2 garlic cloves, crushed
- 1 large shallot, diced
- 1/3 cup prosciutto, chopped
- 1/3 cup red wine vinegar
- 1 cup fresh basil, julienned
- 1/4 cup pine nuts, toasted
- 1/4 cup fresh Parmesan or Asiago cheese
- Salt and freshly ground pepper
- 10 cups ground spinach washed and dried.

Preparation
Step 1
Heat the oilve oil in a large skillet on medium heat. .Add garlic, shallot and prosciutto and saute unti shallots are translucent. Add viengar, salt and pepper. keep warm.
Toss spinach and basil with warm vinaigrette.
Top with Parmesan cheese and pine nuts.
