Ingredients

  • 1

    Pre-made Pizza Crust

  • Olive Oil To Mist The Crust

  • 2

    tsp Olive Oil

  • 1/2

    lb Chicken Breast, diced

  • Salt & Pepper To Taste

  • 1/2

tsp Garlic Powder, or to taste

  • 1

× 12 oz can Artichoke Hearts, drained and diced, reserving 1 cup of the drained liquid

  • 1/2

cup Garlic & Herb Cream Cheese Spread

  • 1/2

cup Fresh Baby Spinach Leaves, washed and dried

  • 1/2

    cup Mozzarella Cheese, shredded

  • 1

    cup Parmesan Cheese, freshly grated

Directions

Preheat oven to 450 degrees F. Line a vented pizza pan or large baking sheet with parchment baking paper that has been trimmed so edges will not hang over the edge or touch the oven wall. Mist the crust with olive oil and set aside. Heat a non-stick skillet on medium and add 2 teaspoons of olive oil and the diced chicken. Sautee until the chicken is no longer pink; turn the heat down to medium low. Add the diced artichoke hearts and 1 cup of the drained juice. Simmer for approximately 10 additional minutes, remove from heat and drain the chicken. Spread the cream cheese over the crust and layer the remaining ingredients over the cheese in the following order: spinach leaves, mozzarella cheese, chicken mixture, ending with Parmesan cheese. Reduce oven temperature to 425 degrees F. Keeping pizza on the pan, bake for 10 minutes. To crisp the crust remove from the parchment-lined pan and place directly on the oven rack for 3 additional minutes. Cool 5-8 minutes before slicing.
