Ingredients

  • 1 Lemon
  • 3 cups Flour
  • 3 tsp Baking Powder
  • 1/8 tsp Salt
  • 1 Cup Margarine
  • 2 cups Sugar
  • 5 Eggs
  • 2/3 cups Milk

Preparation

Step 1

Grate peel from Lemon onto waxed paper.
Squeeze the juice from Lemon for glaze.

In med. bowl measure Flour, Baking Powder, & Salt, set aside.

In large bowl cream Margarine, add Sugar & cream until fluffy. Beat in Eggs one at a time. Add dry ingredients alternating with Milk. Mix well add Lemon peel. Pour into pan, that has been greased & floured.

Bake in 325 deg. oven 1 hr. 10 mins or cake tests done with toothpick. May be baked in 1 10" tube pan or Bundt or 2 loaf
pans (If using loaf pans bake in 350 deg. oven for 45 mins.
