Oven Roasted Smoked Sausage & Potatoes

Smoked sausage with seasoned potatoes and onions is roasted and topped with melted cheese. Yum!

Ingredients

  • 1 package smoked sausage, sliced into rounds
  • 1 large onion, peeled and chopped
  • 5 large potatoes, peeled and chopped into 1/2 inch cubes
  • olive oil
  • fine sea salt
  • freshly ground black pepper
  • sweet paprika
  • dried thyme
  • a handful grated strong cheddar cheese

Step 1

Preheat the oven to 400°F.

Line a large baking dish with aluminum foil and drizzle with olive oil. Use hands to spread olive oil over all sides of dish.

Place the sausage rounds, onions and potatoes into a large bowl. Cover with 2 to 3 tablespoons of olive oil. Sprinkle with salt, pepper, paprika and dried thyme to taste. Mix everything together with hands. Pour into baking tray, and distribute evenly with hands.

Put into preheated oven for 45 minutes to an hour, mixing every 15 minutes or until the potatoes are browned and golden.

Turn off oven and sprinkle the cheese over the top of cooked meat and potatoes, Place back into the oven until cheese melts, about 3 minutes.

Serve immediately.
