Shrimp Gumbo

Ingredients
- 6 onions
- 4 green peppers
- bunch of celery
- 1 bunch parsley
- 4 garlic pods
- 1 1qt. 14oz. can tomato juice
- 2 28 oz. cans tomatoes
- 1 pouch os seafood seasoning
- 1 T. salt
- 5 T. Worcestershire sauce
- 6 drops Tabasco
- 1 T. pepper
- 3 lbs. cleaned and deveined fresh shrimp
- 1 sack frozen chopped okra
- 1 lb. regular or lump fresh crab meat

Preparation
Step 1
Chop onions, green peppers, celery, parsley, and garlic. Saute in bacon grease until transparent. Add tomato juice, tomatoes broken into pieces and their juice. tomato paste and seasonings. Cook slowly for 2 hours. Remove pouch. Add shrimp and cook for 30 minutes. Add okra and cook slowly for another hour. Stir in crab meat and mix thoroughly . Set aside to cool before refrigerating overnight. Reheat next day and serve over a bed of rice. If consistency is too thick, add a can of consomme. Taste to see if more seasoning is needed.
