Ingredients
- 3 eggs
- 1 and a half cups brown sugar, firmly packed
- 1 cup oil
- 125 g walnut pieces
- 1 and a half cups coarsely grated zucchini
- (about 3 medium zucchini)
- 1 and a half cups wholemeal self-raising flour
- 1 and a half cups white plain flour

Preparation
Step 1
Combine eggs, sugar and oil in
electric mixer or food processor, mix
or process until mixture is changed in
colour; this takes only a short time. Stir
in walnuts and zucchini, then sifted
flours, return husks from sifter to
mixture. Spread mixture into well greased
loaf tin (base measures 12cm
x 22cm). Bake in moderate oven approximately
1 hour. Stand few
minutes, turn onto wire rack to cool.
