ZUCCHINI WALNUT LOAF

Any salad oil except peanut or olive
can be used in this recipe.

Ingredients

  • 3 eggs
  • 1 and a half cups brown sugar, firmly packed
  • 1 cup oil
  • 125 g walnut pieces
  • 1 and a half cups coarsely grated zucchini
  • (about 3 medium zucchini)
  • 1 and a half cups wholemeal self-raising flour
  • 1 and a half cups white plain flour

Preparation

Step 1

Combine eggs, sugar and oil in
electric mixer or food processor, mix
or process until mixture is changed in
colour; this takes only a short time. Stir
in walnuts and zucchini, then sifted
flours, return husks from sifter to
mixture. Spread mixture into well greased
loaf tin (base measures 12cm
x 22cm). Bake in moderate oven approximately
1 hour. Stand few
minutes, turn onto wire rack to cool.
