SMOKED SAUSAGE with CABBAGE and APPLES

Ingredients

  • 1/4 cup brown sugar
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 tsp. black pepper 1/8 tsp. ground allspice
  • 1/2 head cabbage, cut into half inch strips
  • 1 cup thinly sliced onion
  • 1 large tart, firm apple, peeled, cored and cut into thin slices
  • 1 lb. smoked sausage, cut into half inch pieces
  • 1/4 cup apple cider or apple juice
  • 3 TBLS. apple cider vinegar

Preparation

Step 1

Preheat oven to 325.
Combine in small bowl the brown sugar, garlic, salt, nutmeg, pepper and allspice.
In large oven safe casserole dish or Dutch oven, layer half of each of the cabbage, onion, apple and sausage. Sprinkle with half the brown sugar mixture.
Repeat with remaining cabbage, onion, apple and sausage and then the rest of the sugar mixture.
Pour the cider or juice and the vinegar over the top.
Cover tightly and bake for 2 hours stirring occasionally. Add more cider or juice if mixture seems a little dry.
Serve hot with crusty bread and warm applesauce.
