Zucchini with Tomatoes


One of mom's specialties. It makes a great side to serve with beef or chicken.

  • 1 small onion (sliced or diced)
  • Oil for coating pan
  • Salt and pepper
  • 3 medium zucchini (cubed with seeds removed)
  • 3 crushed garlic cloves
  • 1 can (14.5 oz) Italian Style stewed tomatoes
  • Basil, oregano and parsley

Cooking time 55mins


Step 1

Fry onion and garlic in oil until soft.

Add crushed stewed tomatoes, basil, oregano, parsley salt and pepper to taste; cover and simmer until tomatoes thicken.

Add sliced zucchini and simmer on low heat with the lid on the pan until the zucchini is soft and completely cooked; stirring occasionally.
