Zucchini with Tomatoes
One of mom's specialties. It makes a great side to serve with beef or chicken.
- 1 small onion (sliced or diced)
- Oil for coating pan
- Salt and pepper
- 3 medium zucchini (cubed with seeds removed)
- 3 crushed garlic cloves
- 1 can (14.5 oz) Italian Style stewed tomatoes
- Basil, oregano and parsley
Preparation time 15mins
Cooking time 55mins
Fry onion and garlic in oil until soft.
Add crushed stewed tomatoes, basil, oregano, parsley salt and pepper to taste; cover and simmer until tomatoes thicken.
Add sliced zucchini and simmer on low heat with the lid on the pan until the zucchini is soft and completely cooked; stirring occasionally.
