Glazed Lemon Pound Cake

Ingredients

  • 5 T softened butter
  • 3/4 c. sugar
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. flour
  • 3 T lemon juice
  • 1/4 c. milk
  • 2 large eggs

Step 1

Preheat oven to 350 degrees. Butter and sugar a 9x5 loaf pan. Whisk flour, salt and soda together. Stir 1 T of lemon juice and the milk together. Mix butter and sugar until pale and fluffy. Add eggs. Alternate wet and dry ingredients into butter and sugar mixture. Bake 35 minutes or until tester comes out clean.

Mix 3 T sugar and 2 T lemon juice for the glaze. Brush 1/2 of the mixture over cake. Unmold after 10 minutes and glaze the rest of cake.

Serve with whipped topping and fresh berries.
