Cranberry Nut Biscotti

Ingredients
- 1 tbsp cinnamon
- 2 tsp baking powder
- 29 oz. flour
- 5 eggs
- 1 tsp salt
- 1 lb. granulated sugar
- 8 oz. butter, melted
- 10 oz. nuts
- 10 oz. craisins
- Chocolate, tempered, for drizzling

Step 1
Sift together the flour, baking powder and cinnamon.
In a large bowl, whisk together the eggs, salt and sugar until thick, approximately 3 mins, until doubled in volume. Add the butter. Stir in the flour mixture. Add nuts and craisins.
Divide the dough into 3 equal parts. Refrigerate until cold.
Roll each piece of dough into 12" log. Place on a paper lined sheet tray leaving at least 3" between each log.
Bake at 350 degrees F until golden brown, approximately 20 mins. Cool completely then slice into 1" thick slices on a bias.
Place the sliced cookies upright on a sheet pan. Reduce the heat to 325 degrees F. Bake until biscotti is cooked through completely, approximately 40 mins.
Once cool, drizzle with tempered chocolate, if desired.
