Sun-Dried Tomato Bacon Butter

Ingredients
- 2 tsp. olive oil
- 2 slices bacon
- 1 stick butter (softened)
- 2 T minced shallot
- 1 1/2 T minced sun-dried tomatoes
- 1 T minced flat leaf parsley
- 1 minced garlic clove
- 1 tsp. lemon juice
- 1/2 tsp. minced thyme
- 1/4 tsp. hot red pepper flakes
- 1/4 tsp. dried oregano

Preparation
Step 1
Fry bacon until crisp. Transfer to plate to drain. Finely chop bacon. Stir bacon, butter, shallot, tomatoes, parsley, oregano, red pepper, thyme, lemon juice and garlic. Season to taste with salt and pepper. Serve with fresh ears of corn.
