Ingredients
- 7 1/2 # Sweet potatoes, cooked, peeled cut into 1/2-inch cubes
- 1 1/2 # Celery, thinly sliced on an angle
- 2 # Pineapple tidbits, well-drained
- 10 oz raisins
- 9 oz Walnut halves, toasted
- 2 1/4 Hellmann’s® Real Mayonnaise
- 2 1/4 Sour Cream
- 3 TBS Orange peel, grated
- 1 1/2 tsp Ginger, ground
- 1 1/2 tsp Salt
- Bibb lettuce leaves
- Pineapple leaves, trimmed to size
- Red Bell pepper strips

Preparation
Step 1
1. Combine ingredients. Stir to blend. Pour over sweet potato mixture; toss lightly to coat. Chill before serving.
2. For each serving: Line salad plate with lettuce. Spoon 8 oz potato salad on top. Garnish with pineapple leaves and pepper strips.
