Vinegar Smashed Potatoes

    lb. small red potatoes

  • c. table salt

  • 4

    T. malt vinegar

  • 5

    T. olive oil


Add 1 1/2 c. salt to 2 qts. water. Bring to a boil and dissolve the salt. Add washed whole potatoes. Boil until tender about 30 minutes. Drain potatoes and cool on a rack. Spread olive oil on a cookie sheet evenly. Smash each potato on the cookie sheet. Brush vinegar on each potato evenly. Bake in very hot oven (500 degrees) for 30 minutes or until crispy. Spread additional vinegar on each potato while hot. Serve immediately.
