Szechuan Pork and Broccoli

Ingredients
- 1 lb. lean pork (tenderloin or roast)
- 6 green onions
- 1 medium green or sweet red pepper
- 1-1/2 C fresh broccoli florets
- 1 large onion
- 2 garlic cloves, sliced
- 1/4 tsp. ground ginger
- 1/4 tsp. crushed red pepper flakes
- 2 Tbl. hot water
- 2 tsp. sugar
- 6 Tbl. ketchup
- 4 Tbl. soy sauce
- 3 Tbl. vegetable oil
- 12 snow peas

Step 1
Cut pork into 1-in.x1/4-in. strips; set aside. Cut green onions, pepper flakes, water, sugar, ketchup and soy sauce; set aside. In wok or large skillet, heat oil over high. Stir-fry pork until no longer pink; remove and keep warm. Add more oil if necessary; stir-fry all vegetables until crisp-tender. Add pork and sauce mixture; cook until thickened
