Ingredients

  • 18 1/2 Oz Package Yellow Cake Mix

  • 3 1/2 Oz Package Instant Lemon Pudding

  • 4

    Eggs

  • 3/4

    C Vegetable Oil

  • Glaze:

  • 4

    C Powdered Sugar

  • 1/3

    C FRESH Lemon Juice

  • 1

    Lemon Zested

  • 3

    Tbl Vegetable Oil

  • 3

    Tbl Water

Directions

Preheat Oven to 350 Degrees. Spray mini muffin pan with nonstick spray or line with mini muffin cups. Combine cake mix, pudding mix, eggs and oil with electric mixer, 2 mins. Pour into muffin pan, filling each cup about halfway. Bake 12 minutes. Glaze: Sift sugar into bowl. Add in remaining ingredients and mix until smooth. Drizzle over warm muffins and let stand one hour. Glaze will harden.
