Roasted Asparagus
Combined recipe from Ann Romney and Ina Garten. Made this for Christmas dinner 2013. Easy and excellent! I did not use Parmesan Cheese. I definitely suggest using the vegetable peeler to peel off tough ends. I did not do this and the ends were difficult to chew.

Ingredients
- 2 pounds fresh asparagus
- Grape seed oil
- Grated Parmesan cheese (optional)
- Kosher salt, plus extra for sprinkling
- Freshly ground black pepper

Preparation
Step 1
Heat oven to 400 degrees. Cut off ends of asparagus. If asparagus is thick, use a vegetable peeler to peel off tough ends. Place in single layer in pan. Drizzle with grape seed oil and roll asparagus back and forth to coat the asparagus. Sprinkle with salt, pepper and cheese, if desired. Roast from 10-20 minutes. Check after 10 and go from there. Don't roast too long or asparagus will get mushy.
