Make-Ahead Mashed Potatoes (for a crowd)

Ingredients

  • 5 lbs. potatoes (cooked and mashed)
  • 2 c. sour cream
  • 2 3 oz. cream cheese
  • salt and pepper

Step 1

Combine all ingredients mixing well. Place in large casserole dish. Refrigerate until ready to use. (The potatoes may be stored in the refrigerator for 5 days.)

When ready to use, let stand at room temperature for 30 minutes. Bake covered at 350 degrees for 50-60 minutes or heated through.

NOTE: You can add garlic or onion powder to the potatoes if you want to vary the seasoning and taste. You can also dot the top with butter before placing in the oven.
