Ingredients

  • For the Bean Sauce:
  • 1 cup of dried black beans or 2 cans of drained and rinsed black beans (liguid reserved)
  • 1 1/2 cups of long grain brown rice
  • 1 1/2 cup bean cooking liquid
  • 1 tablespoon of cooking oil
  • 2 stalks of celery - trimmed and diced
  • 1 cup of diced sweet onion
  • 1 cup of diced green pepper
  • 3 - 4 cloves of fresh garlic (peeled, stemmed and minced
  • 1 teaspoon of minced fresh ginger
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of oregano leaves
  • Optional - 1/8 - 1/4 teaspoon dried chipotle pepper
  • 1 cup of bean cooking water
  • 1 bay leaf
  • 1 unsalted vegetable bouillon cube
  • Optional: 1 teaspoon liquid smoke
  • 1 tablespoon Braggs Liquid aminos or soy sauce
  • 1 tablespoon unsalted tomato paste
  • Optional: 1/4 teaspoon of salt or to taste
  • 6 tablespoons fresh minced cilantro for garnish
  • 1 lime sliced in 6 wedges to serve with the rice and beans

Step 1

Bean Cooking Directions

Stove-Top: Soak the beans for 6-8 hours in cold water. Drain the beans add cold water to cover, bring to a boil, skim foam cover and simmer 1-2 hours until just tender.

Bean Sauce Directions - canned beans:

Drain the beans and rinse but reserve the liquid
Simmer beans sauce while you prep the veggies and parboil the rice

Long Grain Brown Rice Cooking Directions

Wash and rinse the rice twice, draining well
Add to 2 quart sauce pan with 2 1/4 cups of cold water
Bring to a boil, cover and simmer for 30 minutes
Remove brown rice from heat and set aside. Rice should be chewy and all water absorbed at this point

Cuban Rice and Black Bean Cooking Directions
(While the bean sauce is simmering and the rice is cooking)

Preheat oven to 350 degrees
Heat 1 tablespoon of cooking oil on medium low in a dutch oven or sauté pan (oven proof) on top of stove.
Chop the garlic, onion, ginger, pepper and celery
Stir fry the vegetables until the onion is translucent
Add the spices and oregano and stir for 2 more minutes
Add the brown rice and mix with vegetables
Stir the beans and sauce into the rice and veggies
Cover, transfer to the preheated oven and bake for 30 minutes
Serve immediately, garnished with chopped cilantro and lime wedges
