Apricot Chai Spiced Rice

Ingredients
- 2 cups water
- 2 cups coconut milk
- 2 cups basmati or jasmine rice
- 2 cinnamon sticks
- 1/4 t. ground cardamom
- 2 T. fresh ginger, minced
- 1/4 cup chopped dried apricots
- Pinch of salt
- 1/4 t. course ground pepper

Preparation
Step 1
Place all ingredients exempt rice in a medium pot and bring to a boil. Add rice, stir, and cook about 35-40 minutes. Don't stir again until liquid is reduce and rice is cooked. Remove cinnamon sticks, stir, and serve.
