Smoked Tuna Spread

I keep my kitchen stocked witha few low-cost, nonperishable proteins that I count on for their ease and speed. Canned tuna is an absolute must for the cupboard because it's so versatil. In this spread, I mix tun with a few other pantry staples, including mayonnaise, sweet relish, and dried dill for a sophistacated-tasting spread that takes only ten minutes to make. Liquid smoke is a specialty ingredient worth buying since all it takes is a few drops to make a smoky impact (one small bottle lasts a long time). * Ten Dollar Dinners*
Ingredients
- 3 tablespoons mayonnaise
- 2 teaspoons fresh lemon juice
- 1 teaspoons sweet relish
- 1/2 teaspoon dried dill
- 1/4 teaspoon liquid smoke
- 5-ounce can oil-packed light tuna, drained
- 1 celery stalk, finely chopped
- 1 scallion (white and green parts), finely chopped
- Kosher salt, if needed
- Fresh bread or crackers, for serving

Step 1
Stir the mayonnaise, lemon juice, relish, dill and liquid smoke together in a medium bowl. Add the tuna, celery, and scallion and stir until well mixed. Taste and add a pinch of salt if needed. Serve wtih fresh bread or crackers.
