Sausage and Potato casserole
This is really good and not a lot of eggs. It serves a lot of people when doubled!
Ingredients
- 2 cups frozen has brown potatoes
- 4 tablespoons chopped onion
- 2 tablespoons margarine
- 1 cup shredded sharp cheddar cheese
- 1 pound regular or hot sausage, cooked and drained
- 4 ounces sliced canned mushrooms
- 4 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon cracked pepper

Step 1
Fry potatoes and onions in 2 tablespoons of margarine until golden brown; place in greased 8 or 9 inch glass baking dish (unless you double it then use a 9 x 13). Top with cheese. Crumble sausage and spread over cheese; top with drained mushrooms. Combine eggs, milk, salt and pepper; pour over sausage. Bake at 350 for 30 to 35 minutes(increase time if doubled).
This can be prepared ahead to freeze or refrigerate. Do not add egg mixture until ready to bake. Mushrooms can be omitted.
