Ingredients
- 3 lge eggs
- 1 1/2 c. sugar
- 1 t. grated lemon rind
- 7 T. cornstarch
- 1/4 t. salt
- 1/2 c. lemon juice
- 1 1/2 c. hot water
- 2 T. butter

Preparation
Step 1
Separate eggs.
Mix cornstarch, sugar, salt, and water.
Cook until thick. About 8 min.
Add beaten egg yolks (add litte of cooked mixture at a time for 4 or 5 times.
Cook for 5 min.
Add rind, butter, and lemon juice.
Pour over crust.
Meringue:
2 t. cornstarch
1 t. water.
1/2 c. boiling water
6 T. sugar
Mix cornstarch and water.
Add boiling water. Cook till thick.
Add to well beaten egg whites with sugar.
Spread over the lemon mixture.
