carrot cake mix
cup crushed pineapple, undrained
1 pound box or 4 cups powdered sugar
stick margarine, softened
ounces cream cheese, softened
cup coconut, optional
Cake: Preheat oven to 350 degrees. Grease and flour 13 x 9" cake pan. Combine cake mix, oil, eggs, and pineapple. Beat on low speed for 1 minute and 2 minutes on medium speed. Stir in coconut and nuts. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool. Icing: Beat cream cheese and butter until well blended. Gradually, beat in powdered sugar. Add vanilla. Sprinkle with coconut. Refrigerate. Variations: Can substitute 1 (8 ounce) can of Mandarin oranges in place of the pineapple.
