Ingredients

  • 1 stick margarine
  • 1 cup brown sugar
  • 1 large can crushed pineapple, drain juice and reserve
  • 1 small jar maraschino cherries, drained and halved
  • 1 yellow or pineapple cake mix
  • 3 eggs
  • 1/3 cup oil
  • 1 1/3 cups liquid (use reserved pineapple juice and water)

Step 1

Preheat oven to 350 degrees. Grease and flour 9 x 13" cake pan. Melt margarine in pan. Sprinkle with brown sugar. Spread pineapple. Place cherries cut side up. Combine cake mix, eggs, oil, and liquid. Beat 1 minute on low speed and 2 minutes on medium speed. Pour batter over sugar mixture. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Immediately, loosen sides of cake and invert on cookie sheet. Refrigerate.
