Ingredients
- Dressing:
- 15 oz Can Black Eye Peas Drained & Washed
- 1/2 C Tomatoes Diced
- 1/4 C Green Pepper Diced
- 1/4 C Celery Diced
- 1/3 C Red Onion Diced
- 2 Green Onions Sliced
- 1 T Fresh Cilantro Minced
- 1/3 C Red Wine Vinegar
- 1/3 C EVOO
- 1 t Dry Mustard
- 3 Slices Cooked Bacon Crumbled or Pancetta

Preparation
Step 1
Medium Bowl Mix All Ingredients Except Dressing & Bacon.
Small Bowl Whisk Dressing & Pour Over Ingredients, Cover & Refrigerate Over Night.
When Ready to Serve Add Bacon.
