Ingredients
- 1.5 cups self-rising flower
- 1/2 cup sugar
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 egg
- 1 canned pumpkin
- 1 cup bran flakes cereal
- 3/4 cup skim milk
- 1/2 cup light corn syrup
- vegetable cooking spray

Step 1
Heat oven to 400F.
In a medium bowl, combine flour, sugar, baking soda and cinnamon; set aside.
In a separate bowl, beat egg lightly using a fork or a wire whisk. Stir in pumpkin, cereal, milk, and corn syrupy. Add flour mixture; stir until well-blended.
Spoon evenly into muffing cups coated with vegetable spray. Bake for 18 to 20 minutes or until lightly browned and firm to the touch. Remove from pan and cool on a wire rack or serve warm.
