Pumpkin Cookie Sticks

  • 1/2 c soft tub margarine
  • 1/3 c sugar
  • 1 c canned pumpkin
  • 1/3 c maple syrup
  • 1 t vanilla extract
  • 1/4 c egg substitute, defrosted or 2 egg whites
  • 2 c all-purpose flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1 t ground cinnamon
  • 1 t nutmeg
  • 1/2 t ginger
  • Vegetable cooking spray
  • 31 Popsickle sticks
  • 31 almond slivers
  • 3 T raisins

Step 1

Pre-heat oven to 350*. Cream margarine and sugar together until blended in large bowl; add pumpkin, syrup, vanilla and egg substitute or egg whites and beat well. Sift flour, baking soda, baking powder, cinnamon, nutmeg and ginger in a separate large bowl. Add to creamed mixture and mix well. Drop dough by 2 level table- spoonfuls onto cookie sheets sprayed with vegetable cooking spray. Insert a stick into one side of cookie. Gently press almond and raisins in dough to make eyes, nose and mouth. Bake 15 or 20 minutes. Cool completely on wire racks. Store in a tightly covered container.
