Pumpkin Chip Muffins

  • 4 eggs
  • 2 c sugar
  • 1 15-oz can pumpkin
  • 1 1/2 c canola oil
  • 3 c flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 c chocolate chips

Step 1

In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth. Combine the flour, baking soda, baking powder, cinnamon and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill muffin cups 3/4 full. Bake 400 degrees for 15-18 minutes or until toothpick inserted comes out clean. Cool in pan for 10 minutes before removing from pan.
