large ears of fresh corn
large ripe tomatoes, seeded and chopped into ½"
medium cucumber, chopped into ½" cubes
small onion, finely chopped
C fresh parsley, finely chopped
C fresh cilantro, finely chopped
f2 Tbl. fresh lemon or lime juice
salt and pepper to taste
Microwave corn until done. Drain and cool. Cut each ear in half and remove kernels. This should produce about 3 cups. Combine corn kernels, tomatoes, cucumber, onion, parsley and cilantro in a large bowl. Add lemon juice and toss. Toss with 2 Tbl. Italian dressing. Season with salt and pepper. Cover and refrigerate until ready to eat.
