Blueberry Pecan Cake

Ingredients

  • 2 t. flour
  • 5 T. butter
  • 3/4 cup sugar
  • 2 eggs
  • 2/3 cup buttermilk
  • 2 t. grated orange rind
  • 1 t. baking powder
  • 1/2 t. salt
  • 1 1/2 t. vanilla extract
  • 1/4 t. baking soda
  • 1 1/2 cups flour
  • 2 cups fresh blueberries
  • 1/3 cup finely chopped pecan
  • 2 T. powdered sugar

Preparation

Step 1

Preheat oven to 350.

Coat a bundt pan with cooking spray & dust with the 2 t. flour.

Melt butter. Add sugar & whisk. Add eggs & stir well. Stir in buttermilk, orange rind, baking powder, salt, vanilla, & baking soda.

Stir well.

Add flour stirring just until blended. DO NOT OVERSTIR. Stir in blueberries & pecans.

Spoon into pan & spread evenly. Bake for 45 minutes or till done. Cool completely. Sprinkle with powdered sugar & serve.
