Ingredients

  • Turkey carcass
  • 3 48oz boxes chicken stock
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 cup onion, chopped
  • 1 tsp celery salt
  • 1 tsp sage
  • 1 tsp oregano
  • 2 bay leaves
  • salt and pepper to taste
  • 1/2 bag egg noodles
  • 4 eggs, beaten

Preparation

Step 1

Boil chicken stock with turkey carcass. When meat is falling off bone, turn off burner and pull bones out of broth. Take remaining meat off bone with a fork and tongs. Put all meat back into broth. Add carrots, onion, potatoes, and seasonings. After a couple minutes, add noodles and eggs. Serve when carrots, potatoes, and noodles are soft.
