Papadeaux's Crabmeat & Spinach Au Gratin

Ingredients

  • 16 oz. bag spinach frozen chopped
  • 1/2 cup butter
  • 1 lb lump crabmeat
  • 1 tablespoon all purpose flour
  • 4 ounces Monterey Jack cheese, cubed
  • 4 ounces Philadelphia Cream cheese, cubed
  • 3/4 cup half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon ground cayenne pepper
  • 3/4 cup shredded cheddar cheese

Preparation

Step 1

1. Preheat oven 350° F.
2. Microwave spinach according to package directions.
3. Drain liquid and set aside.
4. Melt butter in medium skillet.
5. Add crab meat -sauté 3 minutes - medium heat- do not break up crab meat too much.
6. Remove crab meat- leaving liquid in skillet.
7. Same skillet- stir in flour - cook low heat until well blended.
8. Add Monterey Jack cheese and cream cheese- stir low heat until completely melted.
9. Add Half and Half- seasonings –stir continuously- medium heat until begins to boil.
10. Remove from heat immediately.
11. Add spinach and crab meat- carefully fold into sauce.
12. Pour into 9” x 9” shallow casserole dish or 6 individual ramekins.
13. Sprinkle shredded cheese on top - bake for 10 minutes or until is melted
